- 3 large rainbow carrots
- 4 tablespoons olive oil
- 1 teaspoon coarse salt
- 2 medium purple sweet potatoes
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon chopped fresh thyme
- 1/2 teaspoon fresh ground pepper
1) Turn oven to 400 degrees.
2) Chop potatoes and carrots into bite-sized pieces.
3) Toss all ingredients in a large bowl and spread evenly on a cookie sheet.
4) Roast until tender, about 45 minutes.
5) Serve warm all by themselves or as a side dish.
