Quicky yummy summer salad that actually is great all year round. I love making this over labor day, it makes me savor the moments of the summer coming to an end!
1/2 Lb Green Beans
1 cup of Spring Mix Salad
1 Pear
1/2 cup Red Grapes
Olive oil
Red Wine Vinegar
Salt and Pepper
* If you want to really get creative add the beautiful green, red, brown, or purple heirloom tomatoes to this salad that are also found in this weeks farmbox!!!!!
Bring 2 cups of water to boil on the stove
Add the green beans to the boiling water for about 7 to 10 minutes
While the green beans are boiling, take your pear and slice the pear into half moon slices.
Take the red grapes and slice in half (I always slice them in half becasue I have a daughter and always am worried about her choking on the grapes.
I tend to only cook my green beans for about 7 minutes because I like them a bit crunchy. If you like them a little more well done, leave them to cook for about 10 minutes.
Remove the green beans from the boiling water and run COLD water over them.
Place the Spring Mix lettuce on the plate, then place the green beans on the plate, add your slices of pears, then sprinkle the red grapes on top. If you decided to go all out dice up one heirloom tomato and spinkle it on top also!
I love olive oil and red wine vinegar for a salad dressing, it is healthy, low in calories, and with the sweet grapes and the tart vinegar it is a great mixture for the sences!
Sprinkle the olive oil, and vinegar to your salad, dash a bit of salt and pepper,
Your all done!
